Another great Tuesday morning with the Boulder Business Development group out of Boulder City representing a large chunk of Southern Nevada. Today’s meeting was held in the steakhouse of Railroad Pass Hotel & Casino on Tuesday, August 2, 2022 from 6:45am – 8:15am.
Food Preservation – Do you like to eat?

Chris has recently retired from running Woodchuck’s located here in Boulder City and has transitioned into Food Preservation and Preparedness.
His presentation shared about Freeze Drying foods. We learned that you can freeze dry just about anything and it will have a shelf life of roughly 25 years, with the exception of high sugar content foods including breads.
Chris reminded us that Honey is the only food that does not spoil – it may crystallize, and with a little heat, it will come right back to the right consistency.
The conversation steered in the direction of Water Conservation and the state of Lake Mead, Clark County, and the greater South Western region of the United States. A staggering realization that Chris shared is that two thirds of the water that is consumed in the United States originates from the Colorado Rocky Mountains, feeding west through the Colorado River and East toward the Mississippi.
After recently listening in to a Las Vegas Territory meeting where Katie Horn from the Southern NV Water Authority discussed “Dealing with the Serious Water Issues in the Las Vegas Valley”, I was given a slight feeling of relief to hear that 99.8% of water used within the household of Clark County residents is reclaimed, cycled, and reused. This includes all water that leaves the home through a drain. The distressing figures are what is used outside of the home, in landscaping, evaporative cooling systems, washing of vehicles/outdoor equipment, etc. A BBD member Jean Widner has written a fantastic article regarding Boulder City specific outdoor water consumption, and that it is up to us – the residents – to make a difference in our outdoor usage of water. As Chris says – if you like to eat, freeze drying your favorite foods might be the direction you want to go as the water for farming is not in abundance. This is not a fun topic and the facts keep getting more and more daunting. Chris joked that his freeze dried Spaghetti & Meatballs might not taste like the freshly made meal you envision, but in 25 years, it might be the only Spaghetti and Meatballs around.
Here’s to hoping this is jest and not prophecy.
My hope is that as always, there are individuals who are more educated with the right intentions in the right positions at the right time to lead us in the right direction. “I know you’re out there and I believe in you!” I don’t know who I am talking to, and I don’t need to know their names – all I need is faith that they exist.
